Honey Bun Coffee Cake

It is so light and moist and ever so good.
1 box Yellow Cake Mix
Mix according to box directions
Mix 3 tbsp. cinnamon & 3/4  cup packed brown sugar mix together
Drizzle honey over cake and sprinkle on the sugar and cinnamon, take a knife and run all through the cake,
Bake in preheated oven at 350 for about 30 to 40 min. until done

Delicious Country Brasied Pork Loin Chops

IMG_3187Braising is a good choice of cooking method for cuts of meat that are tougher or from older animals. The connective tissues that are more prevalent in cuts like this, and which can make meats tough and chewy when improperly cooked, are slowly dissolved through long, slow application of moist heat . So you end up with a tender piece of meat. 

Ingredients   
6 boneless loin chops
2 tablespoons veg. oil
 1-1/2 cups beef broth
1/2 chopped onion and 1/2 lg bell pepper or 1 sm.
dried thyme,salt, pepper, paprika,garlic powder
red wine vinegar
Dry chops, make a rub with the last 5 ingredients. let set 15 to 20 minutes to get room temp,and dry .
add veg. oil to iron skillet or a casserole dish (oven Proof) Brown chops on both sides. Take out of skillet.   Add chopped onion and peppers and cook about 5 min. add about 3 tbsp. red wine vinegar, stir to get the yummy off the bottom and add chops back to skillet on top of onions and peppers, add enough beef broth to just come 1/2 way of chops ( do not cover with broth)  Have oven heated to 300 degrees. cover  top of skillet or casserole dish tightly, so  all the steam stays in. I cover with foil and add a lid on top. bake for one and a half hours. check for tenderness if needed bake another 30 min. They will be moist and tender and  when serving spoon broth in skillet over the chops. it is also Fab with mashed potatoes.

Crockpot Chili


Ready when you are and ever so good on a 5 degree cold day.  Winter time is soup time it just warms your soul.


What looks more yummy than all that  melting cheese spilling over into that bowl of chili
Can’t wait!!!.
2 pounds ground beef
1 med onion
1 tsp onion powder
1 tsp. garlic powder
Mix all this into skillet and brown hamburger
While this is cooking add:
1 27 oz. can chili beans
Ok so had to wait for burger to brown slightly, Now add hamburger to crock pot cook on Hi for 1 hr and low for 3 hrs.
So yummy to the tummy
15 oz. chili beans
1 14oz can tomato sauce
1 cup fresh or frozen green, red and yellow peppers
1 15 oz. can tomatoes, (Whole tomatoes I think works better for flavor)
1 cup beef broth mixed with 1- 1 oz. packet chili seasoning mix.
This is where you can add all the heat you want to it
House is smelling amazing already. I know , Right
 

Favorite Black Eye Peas


IMG_3186One cup of cooked black-eyed peas, or cowpeas, has 160 calories and negligible fat. Their 5 grams of protein represents 9 percent of the recommended daily intake for men and 11 percent for women. As with all legumes, black-eyed peas are especially good sources of soluble fiber, which helps prevent type 2 diabetes by keeping blood sugar balanced after you eat. Soluble fiber also binds to cholesterol and carries it out of the body. Men get 21 percent of their daily intake of fiber, while women get 32 percent from 1 cup of black-eyed peas.
Ingredients
2 cans black eye peas
1 sm. chopped onion
1/2 tsp. dried thyme
1 can rotel tomatoes
Drain and rinse peas
pour into 2 tbsp. olive oil for healthier or  2 tablespoons bacon grease   add onion cook a couple min. add peas and garlic if you like. add the tomatoes and time and enough water  almost to top or extra flavor use chicken broth. Cook  low until everything is cooked and add salt and pepper if desired. Very Good.   • Ingredients
     2  whole eggs and 4 eggs yolks.
    1/2 cup sugar
    1/1/2 cup whole milk ( scalded)
    2 tsp.. pure vanilla
    Add eggs to a sauce pan and with a whisk beat eggs well. add sugar and beat.
    Add milk to a smaller sauce pan and when you see bubbles around  a round the sides of pan take off.
     Add 1 table spoon of the milk to eggs mixture and while mixing add a little more milk while stirring,  add milk and stir well ( don’t want to scramble those eggs.)   boil a few inches of water about 3 to 4 inches in a larger pan or use double boiler.
    Stir  often ( only takes about 10 to 15  min. to cook) when  you raise the spoon and the spoon is coated and stays on. take off and pour in cold bowl and add vanilla and stir well.  Set in refrigerator until cold and ready to serve. This will make enough for 3 to 4 serving. Double for a quart.  This is also good for a base for ice cream.  I like to add  whip cream and freeze so good, you would not believe. Country Meatloaf Dinner

 
 Country meal all on one  dish. What could be better than that. I don't know ,but I think life can be easier.
If I can make a good meal and not have a big mess to clean up I am a happy camper.   Add some homemade rolls or pick up a pack at your grocer. For me if making an easy meal ,I can spend a little extra time and make homemade. just to show off a little and let the family think I worked hard to prepare for them a nice tasty meal.
 
Meat Loaf Ingredients
 
1 pound ground beef
1 pound ground round
1 med onion, chopped
1/2 green pepper chopped finely
3/4cup sliced mushrooms ( optional)
2 slices light bread, mix with enough milk to absorb the bread and can mix well pour into meat mixture 
2 eggs
1 tbsp. Worcestershire sauce
salt & pepper to taste
 1 cup tomato catsup

Mix all together and place in oven proof dish and bake for 1 hr. or until done.

Vegetables

Good for you Turnip Greens

Cook 2 to 3 slices bacon in the pan you will be cooking greens in, after the bacon is cooked leave in pan.
Wash and cut greens: add water or chicken broth to about 3 inches above the greens
add salt and cover and cooked on med. heat til tender. This is the way we like them. Some people like to mix up some cornbread batter and drop in spoonful’s on top of greens. some like boiled eggs sliced on top. Some like red pepper flakes. Make them your and put in what you like. I promised easy recipes and trying to bring to you simple and easy for any cook
