Vegetables

Good for you Turnip Greens

Cook 2 to 3 slices bacon in the pan you will be cooking greens in, after the bacon is cooked leave in pan.
Wash and cut greens: add water or chicken broth to about 3 inches above the greens
add salt and cover and cooked on med. heat til tender. This is the way we like them. Some people like to mix up some cornbread batter and drop in spoonful’s on top of greens. some like boiled eggs sliced on top. Some like red pepper flakes. Make them your and put in what you like. I promised easy recipes and trying to bring to you simple and easy for any cook

Grandma’s Caramel Pie

2  cups sugar
1/2 cup sugar ( for browning)
4 tbsp. all purpose flour
3 eggs, separated
1 1/2 cups milk
1 tbsp. butter
Mix sugar and flour set aside and whisk milk and eggs yolks together and add in sugar. Brown sugar in sm. skillet watch very carefully. when your pie mixture  is boiling add browned sugar a little at a time, while still stirring . Le cook until it has thickened Pour into cooked pie crust.  Beat egg whites with mixer until soft peaks add 5 to 6 tbsp. sugar slowly and mix well until stiff peaks. spoon onto pie and brown in hot oven 400 degrees  until browned. Cool and enjoy

Yummy Fresh Orange Cake

Preheat oven to 350
 
1 box yellow cake
1 cup fresh squeezed orange juice
1 cup vegetable oil
1/2 cup sugar
4 large eggs
1 teaspoon pure vanilla
 
Mix all ingredients together and mix well ( forget the directions on box.)
This is all the ingredients you need.
Pour into a greased and floured bundt pan
and bake for 40 to 45 minutes or until toothpick inserted in cake comes out clean.
 
Frosting
Before frosting squeeze fresh orange juice over cake
1 1/2 cup powdered sugar
4 tbsp. orang juice and zest of 1/2 orange
mix together and when cake is cool frost as desired
I add 1 tbsp. orange marmalade to mine for extra yumminess

 Mary's Country Biscuits
2 cups self rising flour
3/4 cup lard
1  tsp baking powder
1 to 1/2 cups buttermilk
Fold over a few times to smooth out without mixing very much extra flour. ( just enough so it is not sticky, I pat mine out instead of rolling keeps from overworking the flour. and how about this !! you don't have a rolling pin to clean up.
I also use wax paper to pat my dough out on. just roll your mess up and throw in  away.
Cut your biscuits and place in an iron skillet and bake preheated oven to  400 degrees, about 12 to 14 min. or until golden brown.

Delicious Carrot Cake



 Delicious Carrot Cake
3 cups self rising flour
1  1/2 tbsp. cinnamon
2 1/2 cups grated carrots
2 cups sugar
3 egg plus 1 egg yolk
11/4 cups veg.oil
1/2 cup sour cream
2 tsp. vanilla
 
Mix all dry ingredients in a bowl.
Mix sugar and eggs together and add, oil, vanilla  and  eggs and mix.
Add in carrots and mix together.
Add  1/2 to 1 cup nuts
 
 
Basic Cream Cheese Icing
1- 8 oz. cream cheese softened
1 stick butter, softened
1 to 1/12 boxes powered sugar
1 tsp. pure vanilla
 
 
 
 
 
 

Granny's Sweet Tater Pie

 2 cups mashed sweet potatoes
1/2  cup sugar
1 tbsp. butter
3 eggs
1/ 1/2 cups evaporated milk
1/2 tsp. ea. nutmeg, allspice, cinnamon
 
Bake or boil sweet potatoes until tender
Peel and mash
Add all ingredients
1 tsp pure vanilla
Bake 400 for 15 minutes and turn oven down to 350 and bake another 30 minutes or until tooth pick inserted in middle of pie comes out clean

 Banana Pudding Cake
So easy and so yummy
1   Duncan Hines yellow cake mix
Mix according to box directions
2 boxes  vanilla Jello Instant pudding
I lg. container of Cool Whip
Bake cake in 9x 13 oven proof dish
Take a wooden spoon and use the handle to poke holes every 1 inch of cake Mix the pudding mix according to box directions
Pour half over the cake making sure it goes in the holes you poked.
take the other half and add 4 sliced bananas, pour over the cake
Add Cool Whip And sprinkle Graham cracker crumbs. over top.
Make also add chopped nuts, cherries etc.

Mary's Deviled Eggs
12 eggs boiled and peeled
Cut in half
Separate the yellow and add to clean bowl
Mash the eggs with a fork
Add 3 tablespoons Mayo
2 squirts mustard
1 tablespoon pickle relish
1 tablespoon pickle juice if needed.
May add 1 tablespoon chopped pimento
Salt and Pepper to taste
Add the yellow eggs  back to the whites and sprinkle with paprika
 
Good for finger food or a side for dinner.
Enjoy

Yummy Meatballs & Gravy

2 pounds hamburger
1 med. chopped onion
2 cloves minced garlic
1 tsp. salt pepper
2 pounds hamburger
1 med. chopped onion
2 cloves minced garlic
1 tsp. salt pepper
1 egg

Mix all together until combined.( over mixing will cause the meat to toughen) Bake in 400 degree oven until brown. Make gravy 3 tbsp. butter 3 tbsp. flour Combine in skillet and add 2 cups. beef broth more if needed to thin. May be doubled if not enough.
