Mary's Southern Goulash

This was a go to recipe at my house growing up. It fed several people for not a lot of money.
I made it at least 1 time a week for my family.  Everyone always enjoyed it and I served with garlic toast. Hope your family will enjoy this recipe also. Please Follow me here for more yummy old fashion easy recipes.
 
Recipe
1 pound ground beef
1 lg. onion
1 bell pepper
1- 15 oz. tomato sauce
1 - 15oz. whole tomatoes chopped (I think they have a better flavor than the diced, but may be used)
2 tsp. onion powder
1 tsp. garlic powder
2 tsp. yellow mustard
Salt and pepper
1/12 cups cook elbow macaroni
 
Directions
Break hamburger up and brown in skillet with 1 lg. onion chopped. Drain. Add tomato sauce , tomatoes, bell pepper, onion powder, garlic powder, and yellow mustard. add hamburger back to sauce and add pasta and put lid on and cook on low for about 30 to 45 min. until it has all gotten hot and cooked down a little. Serve with cornbread or garlic toast.

Baked Chicken Thighs

 Yummy to the tummy!
Chicken is always good no matter how it is cooked.
This is my favorite way to cook thighs!
Recipe:
6 chicken thighs,
1/2 stick butter
salt
pepper
garlic powder
onion powder
Paprika
 
Melt butter in oven proof dish and sprinkle on the chicken the spices use as much or as little as you like. I just sprinkled one side and laid in the dish with the melted butter the seasoned side down then sprinkle the top side. Bake in 350 oven for about 30 min. or until chicken is done when tested. take out of oven and cover for about 10 minutes, so all the yummy juices can absorb back into chicken. Serve with your favorite sides and enjoy!

I found this wonderful recipe on Food.com it is one of our favorite recipes. It is very much like my mom’s recipe with a slight different. This is a very delicious cake, hope you will try it and love it as much as we do. So here is the recipe!!

Ingredients

      • 1/2 cup boiling water
      • 4 ounces sweet cooking German chocolate
      • 2 cups sugar
      • 1 cup butter, softened
      • 4 egg yolks
      • 1 teaspoon vanilla
      • 2 1/2 cups cake flour
      • 1 teaspoon baking soda
      • 1 teaspoon salt
      • 1 cup buttermilk
      • 4 egg whites, stiffly beaten

Coconut Pecan Frosting

    • 1 cup sugar ( 1 1/2 cups)
    • 1/2 cup butter ( 3/4 cups)
    • 1 cup evaporated milk ( 12 oz. can)
    • 1 teaspoon vanilla ( 1 1/2 tsp)
    • 3 egg yolks ( 4 egg yolks)
    • 1 1/3 cups flaked coconut ( 2 cups)
    • 1 cup chopped pecans ( 1 1/2 cups)

Directions

  1. Heat oven to 350 degrees F. Grease 2 9-inch square pans or 3 8-inch round pans. Line bottom of pans with wax paper Pour boiling water on chocolate, stirring until chocolate is melted; cool. Mix sugar and butter in large mixing bowl until light and fluffy. Beat in eggs yolk, one at a time. Beat in chocolate and vanilla on low speed.
  1. Mix in flour, baking soda and salt alternately with buttermilk, beating after each addition until batter is smooth. Fold in egg whites.
  2. Divide batter among pans. Bake square pans 40-45 minutes or round pans 35-40 minutes. Check for doneness with toothpick in center. Cool and top with Coconut-Pecan Frosting.
  3. Coconut Pecan Frosting: Mix sugar, butter, milk, vanilla and egg yolks in saucepan. Cook over medium heat, stirring occasionally, until thick, about 12 minutes. Take off heat. Stir in coconut and pecans. Beat until spreading consistency. Allow to cool & thicken before icing cake!!

Delicous Southern Potatoe Patties

This is another recipe that I remember dearly growing up, my grandmother always saved all leftovers and used them somehow. Tater patties were the best thing, I could just make my meal off them. Of course it was fried in some of that bacon grease from breakfast. Bacon grease always makes everything better. They even now say it is good for you. Use your own judgment, olive oil is good for you and works just fine

Dinner Table
This is a delicious meal all on it’s own or add a salad. It is another easy and simple meal.
Rotel Chicken
3-4 boneless, skinless Chicken Breasts
1 can Rotel, any variety. I use original.
1 8 ounce brick Cream Cheese
1 can Black or Cannellini Beans, drained
1 can Fiesta Corn, drained

3 /4 cup chicken broth
Place chicken in crock pot, pour can of Rotel over chicken. Cover and cook on low for 3-4 hours or as long as 5. When ready use fork to break chicken into bite sized pieces, add cream cheese, beans, and corn, gently stir. Turn crock pot down to warm heat, cover and serve over rice or with tortilla chips. Yummy sweet Rolls



I found this recipe on Pinerest by Beantown Baker
I must say it is one the best recipes I have found. I used fresh blueberries, for 1/2 of the dough and made Cinnamon/Raisin with the other half. 
 

Ingredients:

For the Dough
2 cups whole milk
1/2 cup vegetable oil
1/2 cup sugar
2 1/4 tsp active dry yeast
4 cup flour
1/2 cup flour
1/2 heaping tsp baking powder
1/2 scant tsp baking soda
1/2 tbsp salt
For the Blueberry Filling
1 pint blueberries
3 tablespoons granulated sugar
2 teaspoons cornstarch
2-3 teaspoons lemon juice
3/4 cup water
Additional Blueberries for Sprinkling
1 pint blueberries
2 Tbsp sugar
4 Tbsp cinnamon
2 Tbsp flour
1 batch Cream Cheese Frosting

Directions:

For the Blueberry Filling
In a small saucepan, combine 1 pint of the blueberries, sugar and cornstarch. Stir in lemon juice and water. Turn heat to medium and cook, stirring often, until mixture begins to thicken slight. Remove from heat and allow to cool.
For the Dough
Mix whole milk, vegetable oil and sugar in a pan. Scald to 150 degrees. Let cool until lukewarm (~45 minutes). Sprinkle in yeast and let sit. Then add 4 C flour, stir mixture together. Cover and let sit for one hour.
Add 1/2 C flour, baking powder, baking soda, and salt. Stir mixture together.
Divide the dough in half. Sprinkle surface generously with flour and form into a rectangle, roll the dough thin, maintaining a rectangular shape. Spread half of the blueberry filling onto the dough. Combine the blueberries, sugar, cinnamon and flour. Sprinkle half of this mixture on top. Roll the dough toward you. Pinch the seam to seal it. Grease foil cake or pie pans. Cut rolls 3/4 to 1 inch thick and lay in greased pans. Repeat with other half of dough and blueberry filling.
Cover the rolls and let sit for 30 minutes.
Bake at 375 for 15 to 18 minutes.
Generously drizzle frosting over warm rolls after they come out of the oven.

This recipe is a chicken Caesar salad with a difference. I have made a lot of twists to the classic here and since I got a telling off for the lack of authenticity of my Colcannon recipe (from the American that had never been to Ireland!) I am always wary of clarifying my recipes as an ‘official’ recipe. So, this has elements of a Caesar salad but it also has elements of homemade with mess, and that to me is the best combination. Don’t get me wrong, I will often look at and follow recipes if something catches my eye, but most of the time cooking is about seeing what you have in your fridge and chucking it together to make something new and delicious. Sweet Pickle Relish

This goes great for your Potato Salad, Tuna, Chicken Salad, Hot Dogs, Hamburgers, anything you would use pickle relish on. Much better than store bought and no preservatives.
 
This will make 5 to 6 pints. Recipe can be cut in half for 4 pints or 8 -1/2 pints
8 cups finely chopped Cucumbers ( I use food processor)
4 cups chopped onions
4 cups mixed color sweet peppers (add some hot pepper if you desire)
...
1/2 cup salt
7 cups sugar
2 tablespoons mustard seed
2 tablespoons celery seed
4 cups  red apple cider vinegar
Mix together cucumbers, peppers, and onion all inti a large bowl and sprinkle on the 1/2 cup of salt.
Pour over veggies and salt cold water to cover  vegetables. Let this set for 2 hours.
After the 2 hours drain vegetables well and rinse and drain ( I pressed on the veggies to get out as much liquid as possible. )

Add veggies to lg pan and add Vinegar, sugar, and seasoning and bring to a boil. Simmer for 10 minutes.
Pack hot serlized jars to 1/4 of top  Remove any bubbles and add serlized lids, Process in boiling water bath for 10 min

Lunch Smoked Sausage and Pasta with Roasted Garlic

3 cups cooked pasta (Save 1 cup pasta water)
2 links smoked sausage cubed
1 sm. onion roasted...

Roast your garlic or used store bought roasted garlic
1/2 to 1 cup cheese your choice
1 &1/2 cup pasta sauce bought or homemade
Salt and pepper to taste
I added fresh basil to mine
add 1/2 tsp. ground ginger.

Add 2 tablespoon olive oil to lg. skillet add cubed sausage, diced green peppers, onion and garlic, Add pasta sauce after peppers and sausage has cooked and cook on low heat until it is all tender and add in cheese and add extra pasta water as needed. enjoy

Left over brownies or evevn chocolate cake will work, but I had brownies so wanted desert for for our supper.
You have to admit this is one sexy looking dessert, be a good valentine dessert, and so incredibly easy and delicious.
Cut warmed  brownies into bite size pieces and place in the bottom of dessert dish.  drizzle  with chocolate syrup.
Add good scoop of ice cream sprinkle with chopped pecans and drizzle  generously with chocolate syrup.
Homemade Chocolate Syrup
1 1/2 cup sugar
2 tbsp.. or more if you like cocoa
3/4 cup milk
place all ingredients in saucepan and bring to a boil , turn down heat to med and cook until begins to thicken
stirring often you can’t walk of and leave it.. It will take about 10 to 12 min. add vanilla. My mom used to make this all the time, her favorite was vanilla ice cream and chocolate sauce and it was always so so good, it became the family favorite.
Hope you will try this and enjoy as much as we do. for valentines dessert mix it up strawberry  would be awesome on the brownie with chocolate sauce.

Yummy Savory Tomato Cobbler

Decided I wanted something different one day for lunch   and went looking  to see what kind of ingredient I had.
I found the tomatoes and went from there. So this is what I come up with and got a thumbs up from hubby.
Recipe:
1 lg. can  diced tomatoes or two smaller cans
1 sm onion sauteed
2 cloves garlic sauteed
1 tbsp. sugar
1 tsp. salt
1 cup whole kernel corn
1/2 cup broth
Dissolve 2 tbsp. bacon grease or oil in a sauce pan
add chopped onion , garlic and cook until softens, add tomatoes, sugar and salt 1/2 cup  chicken or beef broth
Melt 1 stick margarine in casserole dish
Mix 1 cup flour
1 cup milk
1 tsp. sugar
pour this over melted butter and pour tomatoes mixture over the top and top with cheese and bake until golden.
Serve topped with sour cream. yummy

Yummy German Chocolate Cake





1 german chocolate cake mix
Mix according to box directions
3.4 oz.. box vanilla instant pudding
1 regular tub cool whip
1 tsp. vanilla
Bake cake as directed on cake box. Cool: Poke holes with handle of wooden spoon every inch from top to  bottom and side to side.
Mix vanilla pudding with 2 cups cold milk let sit for 10 min. Spread 1/2 of pudding over cake making sure it goes down in the holes. Use your pudding  before it set all the way,it needs to be thin to get down in the holes. mix other 1/2 of pudding with the cool whip and add vanilla , now add 1/2 cup or more nuts and 12 to  3/4 cup coconut . Spread all over cake
Toast in skillet on med heat 1/2 cup coconut to sprinkle on top. It is unbelievable delicious. This is what is on my kitchen table. check back in and see what’s cooking

Mary’s BLT Salad, simple and delicious Cold  snowy days , make me want to bake and make tasty dishes This is a great summertime dessert, but also a great comfort food. Italian Pasta Salad

 
Yummy Stuff
1 box Penne Pasta
1 1/2 Pound ground beef
1 recipe my yummy pasta sauce recipe
 Cook pasta to desired tenderness.   Brown  ground beef.

Pasta Sauce Recipe
1 1/2 cups water
1/3 cup brown sugar
1/2 stick butter
1 small onion chopped
2 tablespoons mustard
2 tbsp. vinegar
1 1/2 cups catsup
4 tbsp. lemon juice
1 to 2 tsp. Italian spices
3 good dashes of Worcestershire sauce
Hot sauce to taste
Mix first six ingredients in a saucepan and  bring to a boil and turn down to simmer for about 20 min.
Add catsup and rest of ingredients  and simmer until mixture cooks down and thickens about 30 to 45 minutes
Add browned ground beef to pasta sauce.
Left over sauce will keep in refrigerator for  2 weeks. It is a good one to make ahead of time if your planning a cookout. I like to start thinking about doing summer things this time of year. I get ready for spring and planning some good vegetables and flowers, My husband plants lots of sunflowers every year all around where they can be seen from every window. Yummy Broccoli Casserole


IMG_3178Broccoli is a fiber find. Not only is it a rich source, but half of its fiber is insoluble and half is soluble, helping to meet your needs for both types of fiber. But the story doesn’t end with broccoli’s rich array of nutrients. Broccoli provides a health bonus in the form of protective substances that may shield you from disease. Botanically, broccoli belongs to the cabbage family, collectively known as cruciferous vegetables.
Recipe:
1 pound of fresh broccoli
1/2 chopped onion
1/2 can cream of chicken soup
1/2 cup mayo,or can use sour cream
1 stick butter
1/2 to 1 cup cheese (I use cheddar or .American)
1 egg
Start by cooking broccoli  Drain
While hot, add all ingredients, pour all into a buttered casserole dish and add crushed Ritz crackers on top bake 350 for about 40 min. Yummy

Mary's Pecan Pie Cake

 This is my version of pecan pie cake. Saw this the other day and thought it interesting , so this is what I come up with.

Yellow Cake

Ingredients

Preheat oven to 350 grease and flour 2 9 inch cake pans.
2 1/4 cups all purpose flour
1 1/2 cups sugar
1 tsp. salt
3 tbsp.  fresh baking powder
1 1/2  sticks butter softened
1 cup milk
3 eggs
1 tsp. pure vanilla
 Mix flour, sugar salt and baking powder whish together in mixing bowl ( it helps to incorporate air into the flour for lighter cake)  Add butter and milk beat 1 min. on med speed, add eggs and vanilla beat 1 minute med speed, Pour into 2  9 inch pans that have been greased and floured.
Bake at 350 for around 30 minutes or until tooth pick inserted in middle comes out clean

Pecan Pie
1 stick butter
4 eggs
1 cup sugar
1 tbsp. flour
1 cup white corn syrup
1 tsp vanilla
1/2 tsp. meal
1 cup pecans
Beat egg  with whisk slightly, add sugar, flour , meal and  add syrup, vanilla. stir well and pour into a grease and floured cake pan that  has pie crust cut for just the bottom of pan. pour filling over and bake 350 until done. it is done when middle of pie is set.  about 40 min. Cool run  a knife around the pan edge  to loosen from sides. let cake and pie get cold before trying to put together.
Ganache Icing
3/4 cup milk or heavy cream
8 oz. chopped semi et chocolate  chopped
Pour boiling milk over chopped chocolate and stir until creamy and ice between layers and rest for top.
add chopped nuts on top for garnish.

Lemon says spring to me and yes I am pushing it, love spring when everything begins to wake up and start to get green and all the spring flowers and trees blooming it is  so beautiful. Love to get the camera out and hold the beauty. You just have to be thankful for all the beauty that God has created. We got a few more weeks to go ,but can so look forward.  Hope everyone is enjoying this day and cook something good.
Ingredients
1/2 cup butter
1 cup Crisco
2 1/2 cups sugar
4 eggs
1 cup buttermilk
2 1/2 cups all purpose flour
1/2 tsp. soda
2 tsp. lemon extract and juice of I/2 lemon
In a Mixing bowl, add butter, shortening, sugar and  mix well.  Add the eggs 1 at a time and mix after each.  Add milf and flour alternately and add 1/2 tsp. soda mixed with 1 tsp. water. mix together and pour into a greased and floured tube pan
have oven preheated to 325. bake for 45 minutes to one hour or until done . Ovens vary in heating. Now to make this cake even more yum squeeze the other half of the lemon over cake and make glaze with lemon juice and zest of lemon, and drizzle over cake. Best Bbq Sauce

This yummy bbq  sauce is good for pork or chicken
It is our favorite recipe we  have used for several years
1 1/2 cups water
1/3 cup brown sugar
1/2 stick butter
1 small onion chopped
2 tablespoons mustard
2 tbsp. vinegar
1 1/2 cups catsup
4 tbsp. lemon juice
3 good dashes of Worcestershire sauce
Hot sauce to taste  









Mix first six ingredients in a saucepan and  bring to a boil and turn down to simmer for about 20 min.
Add catsup and rest of ingredients  and simmer until mixture cooks down and thickens about 30 to 45 minutes

Mom’s Cream Cheese Pound Cake

This is a perfect dessert, it can be served so many different ways. They are good plain, with a drizzle of glace or icing if you prefer.  Summer time it goes really well with oven roasted peaches or nectarines with some whipping cream or scoop of ice cream. Add berries or  butter slices  and lightly toast in oven.  There is only my husband and myself so when I make one I like to freeze half of it. It freezes well.
Ingredients
3 sticks pure butter
3 cups cake flour
3 cups sugar
1 lg. pkg. cream cheese
6 lg. eggs
2 tsp. vanilla
 mix together in a mixing bowl the butter, sugar and cream cheese, mix these together well and add eggs that have been slightly beaten. Add flour  a little a time and blend well, add vanilla   Pour into a grease and floured Bundt pan and bake in preheated oven at 325 for about one hour. check at 35 to 40 min. cooking time varies with every stove, when done let sit on cooling rack for 10 minutes before turning out.

Sauteed Sugar Snap Peas

Who says cooking has to be hard. Simple easy side dishes are a great thing.You are busy all day whether it is taking care of the children,working outside the home or whatever you job is dinner time comes around you don’t want to come home and spend all night in the kitchen cooking and cleaning. That is what my blog is all about simply and totally easy. Who doesn’t like delicious food without a lot of time. You can have fresh vegetables without a lot prep time or cook time. I do love fresh. So much better for you .it is a win win.got 2 thumbs.  up from the hubby. Now that is a great thing as I have a very picky hubby God bless him. In the older days I remember they thought you had to cook all day. But now so many more options and really you can prepare a great meal of most anything ( I did say most). Ha  in a hour some meats require more time and then the crock pot was born and that can be a great thing if your working and have a family to feed when you get home. Start before work and ready when you get home. Add a simple side dish or two and there you have it great meal and you have more time with the family. I got lots of simple and easy go to recipes with little time and fuss. So stay tuned to Mary’Country Kitchen. For more of what’ cooking.
Now for recipe.
1. 16 oz bag sugar snap peas in the produce section.
2 tbsp. Butter or olive oil
1/2  chopped onion
1/2 tsp.garlic powder more if you like more
Little salt and pepper.
add all to skillet and cook over med low heat until as tender as you like
they were very good and made a delicious side for my dinner.

Banana Mango Pecan Loaf

Ingredients
1 stick butter: softened
1 cup sugar
 Cream butter and sugar together.Add
2 eggs
3 to 4 ripe bananas mashed
mix in by hand (spoon)
2 cups all purpose flour and 1 tsp. baking soda
add in 1/2 cup mango and 1 cup chopped pecans.
1/4 cup buttermilk and 1 tsp. vanilla
Mix all and add to a grease and floured loaf pan and bake 350 for 35 to 40 minutes until done.
It is very good with a cup a coffee with a slice of butter on top. It is very good to butter and toast.
